Gastronomy Solutions came up with the challenge of de-alcoholising wine while maintaining all its properties. The device created, Alacarte Ventures, achieves the reduction of alcohol levels in wine to the consumer’s taste through a quick, easy and economical process that does not require the use of additives or chemicals.

In addition, we turn the device into a unique experience where the premium restaurant customer can select the alcohol content with which they want to enjoy their wine and watch the whole process accompanied by an interactive screen while keeping an eye on the selected bottle.

This device reduces the high costs of producing non-alcoholic wine, minimises the possible alteration of the natural attributes of wine that could affect its quality and enables wine consumption free from the harmful effects of alcohol on health.

The duration of the process depends on the desired alcohol reduction, but it takes approximately less than 10 minutes to dealcoholise a whole bottle of wine.

The bottle is placed and the desired alcohol level is selected. The device gently tilts the bottle to extract the wine. The 3 needles come into contact with the wine; two of them inject and extract the wine and the third compensates for the air in the bottle. The device slowly returns the wine to the bottle for the customer's enjoyment.

This process is carried out without opening the bottle, preserving all the essence and bouquet of the wine, but with nuances in the percentage of alcohol. The cork is removed from the bottle after the dealcoholisation process so that the bottle is opened in front of the customers.

The device is equipped with a user-friendly and intuitive touch screen that allows you to select the desired alcohol content and follow the process step by step.

The device has filters for rosé, white and red wine, so that alcohol is never mixed during alcohol extraction. The design has taken this detail into account and distinguished them by their corresponding shades.
